What is 油潑辣子?
油潑辣子 literally translates as "oil-splashed chili" — and that's exactly what it is. Dried chili peppers are placed in a bowl, and searingly hot oil is poured directly over them. The moment the oil hits the chilies, an extraordinary transformation happens. The heat activates the chili's natural oils and aromatics, releasing a deep, complex fragrance that is far richer than any ordinary chili sauce.
